About the Event

An incredible outdoor dining experience with one of Montana's finest chefs. Dine under the big sky at our intimate Garden Table while Chef Austin Brown creates this delicious meal right in front of you. The Garden Table is a great open outdoor space to mingle with others and connect with nature, complete with picnic tables and a big fire pit. Space is limited and reservations are required.

Menu

$35 per person (includes a free MAP beer!) // $40 at the door

The Pig

Whole hog from Montana Natural Pork. Prepared over two days and slow cooked in a imu (hand dug pit) in the Traditional Hawaiian style. Kalua style pork! Served with from scratch corn tortillas, locally backed buns, pickled things, house made sauces, and charred cabbage slaw.

The Salad

Grilled Hearts of Romaine , served with hand torn sourdough croutons and dressed in a black pepper vinaigrette.

The Sides

Whole roasted corn: Prepared elotes style with house made crema, queso fresco, chili powder, lime, sea salt, and cilantro.

Crushed Potatoes: Coal roasted potatoes that are then smashed and crisped on the chapa. Tossed with fresh herbs, arugula, Meyer lemon and olive oil.

The Dessert

Strawberry “Short Cake” A thin Argentinean styled cake filled with dulce de leche and macerated and grilled strawberries quickly finished on the grill and topped with whipped butter milk and toasted pistachios .

Chef Austin Brown is owner and chef of Researched & Developed, a private event and catering business here in Bozeman. He has recently opened up The Bozeman Supper Club, an intimate dining venue in downtown Bozeman. Chef Brown creates incredible meals through the use of the finest local and regional ingredients, with an emphasis on sustainability. He is passionate about helping grow our local culinary community while creating unforgettable experiences that will both amaze and inspire. Cancellation Policy

Due to the nature of this outdoor event, we will not be able to accommodate allergies and/or dietary restrictions. There are no discounts or separate menus for children at this particular event. Gratuity is not included; however cash gratuities will be accepted at the event should you choose to do so. Payment will be required prior to the event through our website. Please dress for the occasion as this is rain or shine event; we will be under a tent if it rains. No refunds, but you can transfer your seat to someone else. We look forward to seeing you there!
